JACOBUS
Jacobus is our new, exclusive wine, the most unique expression of Tempranillo vines.
We have successfully materialised the intense reflection, imagination and research carried out on the vines and the making of our wines during all these years to give the wine a true identity and definition: “Of the land, its mark”.
As a result of all the research, Bodegas Comenge now has a varied collection of yeasts from different genera and species, isolated in our vineyards, to keep the personality of our terroirs intact. An exclusive and patented method for using our yeasts during the fermentation process makes our wines unique products with their own mark of identity.
To make Jacobus, we chose a small organic vineyard planted 870 metres above sea level in a poor limestone soil, isolated and protected by a local forest of oaks and pines. The grapes are picked exclusively by hand in small 12-kg boxes and, at the winery, we carefully select first the racemes and then the grapes. For the fermentation, we use our own, selected yeast with maximum respect for the terroir.
The wine is aged in French oak for 42 months. During this time, the wine remains on lees of the same yeast used during the fermentation process and there is no racking or addition of sulphur dioxide.
The special winemaking technique keeps the character of the terroir intact, giving it an excellent capacity for ageing in the bottle.
Origin of the grape
Viñedo de los Ismas
This vineyard was planted in 1982 under the emblematic peak of Las Pinzas de Curiel at 830-860 metres above sea level. Steep slope of clayey-calcareous soil. This Tempranillo variety makes a wine of intense colour with very fine tannins.
Tasting Notes
Black cherry in the glass with very good depth. Surprising colour despite its long ageing in oak.
Thanks to the technique used, the wine has retained its original character as if time had stopped during the ageing process.
The sensation of fruit is surprising and the aromatic complexity of the wine as a whole will not leave anyone indifferent. The palate has great structure, but it is not perceived as such: its long ageing on lees gives it smoothness, fullness and elegance in the mouth, typical of wines from this winery. A wine for life.
Accompaniment: Red meats, game dishes, charcuterie, well-seasoned dishes and chocolate desserts. Serve between: 16-18º
